Actually, using my suggestion about posting pick times beside each pick, would help with the delays you suffered in this draft.
Each GM would then be responsible for appearing to post at KNOWN times and not have to waste all day sitting around waiting for other GMs to make their picks.
MUCH easier on participants, since they could do their list checks in short order right before they are scheduled to pick, cross off players already taken, and decide on weighted position values for those preferred selections still remaining on THEIR list.
(That GM's #3 ranked WR vs his/her #4 ranked DE, for example.)
Using that format, Scout manages to pull off a 7 round Mock each year, using 32 different GMs, in less than 3 days.
They are able to recruit 32 GMs because everyone knows they won't have to invest a lot of time in it - just carve out their individual pick times from their daily schedule for 2-3 days.
Scout allows trades, incidentally, if 2 GMs can work them out - subject to draft administrator(3), (usually 1 of 3, to share the load 24/7, though 2 are often present at any time) - approval to prevent BS unrealistic trades.
The draft admins are the only volunteers who end up spending a lot of time on the Mock, usually - the rest of the GMs pop in and out as they find time to participate outside their own designated pick slots.
Draft admins also make picks from pre-submitted lists by each GM, in the event that GM fails to make their allotted pick time, so the draft keeps moving.
If a GM shows up late and wants to change a submitted admin pick, (within a reasonable time after the slot has passed, but in no event after the next round has begun), they are allowed to make the switch immediately after whomever is currently on the clock, but cannot draft anyone taken since their slot passed.
