Regarding gravy vs sauce, you have to remember that Italy is not one country, but many. Specifically, three major regions, Alt Italia (northern half of the mainland), Bas Italia (southern half) and Sicilia. People from those parts of the country rarely consider the other regions countrymen and the language, food and culture, at least in Sicily are markedly different, The Italian born Mrs. Fudbutter who grew up in a family that predominately spoke Italian had a great deal of trouble talking to people in Sicily. She says that the term gravy used instead of saying sauce is predominately Sicilian but also occasionally used in parts of Bas Italia, mostly from those who originated in Napoli.
